Where Papa's Pilar Dark draws from nine rums across five countries and three cask types to build depth and complexity, the Blonde is a more refined, elegant expression — six premium rums from four countries, aged in two cask types: bourbon barrels for vanilla and caramel structure, and Spanish Oloroso sherry casks for oxidative richness and dried fruit character. Both expressions are produced in partnership with the Ernest Hemingway estate in Key West, Florida, where the Hemingway Rum Company operates its distillery and tasting center in a renovated tobacco warehouse on Simonton Street.

Papa was Hemingway's nickname; Pilar was the name of his custom 1934 Wheeler fishing boat, used to cross the Florida Straits to Cuba, hunt German U-boats during World War II, and chase the marlin and tuna he immortalized in his writing. The Hemingway family donates 100% of their royalties to organizations supporting adventure, literacy, and conservation — causes that defined his life's work.
